How long does coffee stay fresh after roasting?

Whole beans stored airtight at room temperature are at their best from about day 3 to somewhere around a month off the roast date, then decline gradually. Pre-ground coffee loses its brightest aromatics within minutes and is best used within a week or two. Coffee never becomes unsafe — it just goes flat, papery, and dull.

Why does coffee need a few days after roasting?

Freshly roasted beans release carbon dioxide for several days, a process called degassing. Too much CO2 makes espresso gush and pour-overs taste thin and sour. That is why many roasts taste best starting around day 3–5, once the gas has settled but the aromatic oils are still intact.

What is the best way to store coffee?

An opaque, airtight container at room temperature, away from heat, light, and moisture. Those four — oxygen, light, heat, and humidity — are what stale coffee. Avoid clear jars on the counter and the fridge, where condensation and food odors are a problem. For long-term storage, freeze whole beans in sealed single-use portions.

Can I still drink stale coffee?

Yes, it is perfectly safe; it just will not taste good. Stale coffee tends toward cardboard, papery, or muted flavors. If you have beans past their prime, cold brew is the most forgiving use — the long, cold steep and heavy dilution hide a lot of the dullness.

Does grinding coffee ahead of time hurt freshness?

A lot. Grinding multiplies the surface area exposed to oxygen, so ground coffee stales in a fraction of the time whole beans do. If you can only make one upgrade to your coffee, it is grinding right before you brew rather than buying pre-ground or grinding a week's worth at once.
